Red Velvet Whoopie Pies



Ingredients:
1 box Devil’s Food Cake mix
                                                                         ¾ cup water 
½ cup vegetable oil 
2 tablespoons red food coloring 
1 box chocolate instant pudding mix

Filling:

                                                               2 cups marshmallow cream 
1 ½ cup powdered sugar 
1 tsp. vanilla extract

Topping:

½ cup blueberries
                                                                     ½ cup raspberries

Directions:

Heat oven to 350 degreees.
In a large bowl, mix cookie ingredients together. Drop batter ¼ cupfuls 2 inches apart onto a greased cookie sheet.
Bake 12 to 15 min. or until set.  Cool 2 min. and remove from cookie sheet.
In a large bowl, mix the filling ingredients together. For each cookie pie, spread about ¼ cup filling on bottom of 1 cookie.  Top with blueberries, raspberries and top with another cookie.
